This morning Hubert arrived at the hotel to take us south from Cusco, Peru’s ancient capital.
.
We had already had our cocoa tea so our altitude experience was, at least, under control and we were ready to roll.
.
Off we went for about an hour and a quarter to a tiny village built on a really precipitous hillside.
.
I was pretty sure our car would roll backwards and tumble end to end down the thousands of feet of empty space.
.
I was wrong.
.
Thank God Jaimie was driving.
.
It looks very much like only his magical powers kept us alive. I could be wrong
.
There are many collectives of women weavers in this village. As we made our perilous ascent I wondered why we were passing one after another.
.
I turns out the one we visited is the newest, least known and highest up the mountain.
.
The company which has arranged our trio, Adios Travel, has a policy of supporting new, indigenous and struggling enterprises.
.
This qualifies on all fronts since the 12 families who weave and teach weaving there are all full Quichua tribal people, Andeans, as they like to refer to themselves, not Indians.
.
Wearing their full skirted native dresses, amazing hats and bight jackets with spectacular braids like cornrows complete with heavy black beaded tassels showing that the are married, we had a lecture on shearing the alpacas, cleaning their wool with the “Inca Shampoo” made by laboriously grating and filtering the root of the agave plant and then adding water to allow scrubbing the filthy wool to a gleaming brightness.

Next the wool is spun into a double worsted thread using a simple tool found world wide called a drop needle.
.
All over this region we have seen women walking or carrying out other activities with their drop needles creating their yarn.
.
The natural colors from the cochineal beetle (carmine, orange, pink, depending on whether lemon juice, salt, water, etc., were added to the fine powder made from the tiny parasitic beetle of the prickly pear cactus) blue and purple from flowers and purple corn and so on.
.
Their demonstration was beautiful and so were they, proud and gentle at the same time.
.
Their wares, woven of baby Alpaca, adult alpaca and sheep wool were magnificent.
.
Much of it speaks the iconographic language of their people who, in ancient times had a high culture in the absence of alphabetic or glyphic writing.
.
Then on to the Inca Morey sinkhole.
.
Doesn’t sound too interesting, does it?
.
Well, what these engineering geniuses did was construct a series of magnificent concentric terraces and walls down the contour of this immense hole.

The main formation and the surrounding subsidiary ones had pipes to irrigate the terraces for adapting plants to higher elevations, making ceremonial offerings to Pachamama, Mother Earth and, movingly, bringing her water to a filter at the very bottom of the sinkhole because the Inca realized that the reason Pachamama created the sinkhole in the first place is that she was thirsty.
.
Thus, the offerings of gratitude and the water offered to Her are the services of grateful children.
.
This sinkhole is, of course, a center devoted to personal and crop fertility.
.
I am no sure I have ever seen a more moving testament to living in harmony with the earth.
.

I don’t know about you, but I would love to be here.
.
After the astonishing Moray Greenhouse experience, where these ingenious people selected corn that can grow at 11,000 feet without a single gene gun to damage the genetic integrity of any part of the ecosystem we went to see the Maras Salt ponds.
.
Like the Romans, the Inca paid wages in salt and, like them, they had salt mines.
.
These were worked not by slaves, however, but by Families.
.
The calcium chloride deposits are deep within a mountain washed over by a river.
.
Thousands of stepped terraces hold the briny outflow so that the fierce sun can evaporate the small ponds.
.

Once harvested, the ponds are checked to make sure that at least 4 inches of water-impermeable clay lines the bottom of the terraces and then the sluces are opened to allow the briny mixture to fill the terraces again.
.
This marvel of creative engineering is in use to this day.
.
Downstream from the salt terraces, the river runs clear and life flourishes.
.
If it were not working, everything downstream would be as dead as the plains of Carthage after the Romans sowed them with salt.
.
I have visited those long-ago fertile fields, by the way and they are still dead.
.
So the Maras salt mines not only provide mineral rich salt, they protect the land for hundreds of miles.
.
OK.
.
Food.
.
Quinoa soup at the tiny family-run Uchucuta restaurant nevaude the one we were headed for had a large group go in just as we eere arriving.
.
No matter. There are more. This is Peru and, so far as ee know do far, they are all good.
.
I tried the protein-rich quinoa soup.
.
It alone is worth the trip to Ollantaytambo.
.
Dinner at El Auberge literally on the platform where our train leaves at 8:00 fo Aquas Caliente, the door to Machu Picchu.

Red quinoa salad wirh apples and blue cheese.

All organic from their own farm next store.
.
Their Peruvian organic coffee is not as good as our Panamanian Organic ciffee, of course but disguised as Cappuccino it was prettu good.

And Chicha Mirado made with purple corn.
.
Incomparable Mmmmm!

General Bert and I are very, very high. Over 11,000 feet high, that is. I was quite certain we would have no difficulty with altitude sickness because, after all, we are skiers and have skied from that altitude many times.
.
Well, DUH! You get off the chair lift, maybe have lunch or a hot chocolate and then you SKI DOWN. You don’t stay there. OOPS!
.
We got to the ancient Inca city of Cusco and I felt like I had aged 150 years – even the exertion of bending over to tie my shoes left both General Bert and me huffing and lightheaded.
.
We have been drinking cocoa tea and it really does help with oxygen to the brain and muscles with absolutely no psychoactive effect whatsoever. Pretty cool!
.
Peruvian hotels include breakfast following the European pattern. The fruits fresh from the jungle (Cusco has its very own jungle which supplies massive amounts of fresh fruit) were lovely and the quinoa cream porridge with cinnamon was delightful.
.
Then off to the San Pedro Market at 8:30 AM.
.

This is a market where you can have a traditional dress made by seamstresses who have their Singer Sewing Machines right there and where you can buy as much of the butcher-ready pig that just walked in slung over a guy’s shoulder as you would like and where dozens of ladies wave at you to come to their little spot so they can make your fruit drink with any combination you can imagine and where you can buy fresh chickens and free range eggs and then wander into the medicinal herb aisles where the native healers will tell you which herbs you need and sell them to you and the potato aisles and the grain aisles and the aisles devoted only to soup and the ones devoted only to full meals and the ones devoted only to light snacks.
.
You can see the stands where offerings to the Quechua (Inca) deities are put together according to the wishes and intentions of the worshiper and the aisles devoted only to bread from the baking region and on and on.
.
The purity and safety of the food is controlled by the Cusco Region and I would say they are doing a spectacular job by the look, feel and smell of this enormous market.
.
Across the street is a conventional supermarket. But in addition to the traditional ladies in their traditional skirts and hats (which announce their marital status and place of origin) the crowds were in the traditional San Pedro Mercado.
.
People will walk an hour each way every day to get fresh, familiar, first quality food at prices substantially below the supermarket prices.
.

Why are they lower? Because agro-chemicals are expensive and these people are too poor to purchase them!
.
Peru, which has a moratorium on GMOs, is food focused in a very interesting way: Peruvians understand that food and culture are intimately related and strive to protect and preserve both.
.
After the market, it was time for lunch and we went to a restaurant where I had a local drink called chicha morada made from purple corn and cinnamon. It is the non-alcoholic version of chiche, a local beer.
.
It is an intense purple and is, without doubt, one of the nicest, most refreshing beverages I have ever had.
.
I am currently inquiring whether it can be bottled so we can get it to North America. I do not know if that will work, but I am checking it out.
.
Obviously, it has not had its ORAC level tested, but I will bet anything that it has an astonishing anti-oxidant score!

Rima.Bert.red At 5 AM this morning (16 September 2015) General Bert and I will have left our home and go to the airport in Santiago, Chile, where today there was a complete shut down of the entire facility because of a labor dispute.

The internet says the planes will be flying and, Lord Willing and the Creek Don’t Rise, so will we.
.
By mid afternoon we’ll be in the ancient city of Cusco, Peru, the gateway to Machu Picchu and more, while people in Chile begin to celebrate their National Days (imagine the Fourth of July lasting a good part of a week…).
.
We had hoped to do four live video broadcasts but we were [once again] abruptly severed from our now former livestream network, so instead we’ll be doing video and audio podcasts and initiating our own information channel, www.OpenSourceTruth.TV — remember, you can always find our podcast and livestream media at our original media page, www.HealthFreedomPortal.org

Sacred Food at Boragó

Sacred Food to Heal the Soul

Rima.Bert.red Today was a rough day: a friend and supporter turned on us without, as far as we could tell, any logical reason to do so. Devastating. Enraging. Shocking. Not unfamiliar. But so disappointing that, ultimately, I could not sit at my computer and continue working without a break and a breather.
.
Since it was dinner time we had the choice: cook or go out. I was in no mood to cook. I wanted a diversion and I wanted it to taste really, really good.
.
I looked online and found Boragó in Vitacura Country, Santiago. #58 of 3,570 Places to Eat in Santiago according to TripAdvisor.
.
Ok, good enough and pretty close by.
.
Boragó refreshed my soul, but not because it is a stunning restaurant, or because it is elegant and stylish, immaculate and creative in its decor, not because its bilingual staff uniformly provided a level of courtesy and attention almost otherwise non existant.
.
No, Boragó refreshed my soul because it is abundantly clear that Owner-Chef Rodolfo Guzman has a mission. Everything we ate was from one part of this country, Chile, or another. Everything was hand gathered from the sea, the forest or the desert. This food was organic, wild crafted and meticulous. Everything was presented with attention to its relationship to the environment and the diner’s relationship to the food that ties him/her to the earth, setting fantasy and pleasure centers free to soar while the planet is gently reaped for its sustainability and our sustenance.

BoragoAmuseBouche-300x225 In short, the 10 course tasting menu, which was served with a perfectly prepared sip of one astonishing fresh juice or another (we do not drink alcoholic beverages, so that was more than perfect for us) melded and surprised our palates as the tiny portions of the philosophical and culinary fest rolled on.

Rodolfo left this evening before we arrived, but his deep philosophy and presence lingered in the inspired statement of commitment to the sacred triad of the food, our home and those fed.

There was harmonious music in that food, I promise you. There was philosophy and art and science and, most of all, joy. Zinging, swinging, brash and tender joy, pure and simple.
.
No, I do not want to eat such perfection at such leisure and cost every day. It would waste precious resources and dull my keen appreciation for the marvel of this kind of extraordinary dining.
.
Do I strive to capture the wonder, awe and the appreciation for the bounty and beauty of our food, when it is clean, unadulterated, un-tampered-with in every bite of every bit of food I take in? Yes, most certainly; and with appreciation.
.
I commend to you a sense of the sacred in your intake every day, for a bit of rapture in your meal time spice kit.
.
And I commend Boragó, a restaurant with an inspired, and inspiring soul when you are in Santiago.
.
Real food is sacred soul food. And real food heals more than just the soul.
