Natural Solutions Foundation took on the property after it had been abandoned for several years. The owner could not borrow enough to buy enough pesticide, fungicide and herbicide to force a crop out of the coffee bushes, which, despite the abuse, had survived due to the bountiful natural environment.
The primary problem was fungi. The same conditions that make for the best coffee: shade-grown; high mountain volcanic soil; pure water; temperate, year ’round growing season — all of these, present to perfection in the Panama Highlands, also produce very healthy fungi.
So, Dr. Rima reasoned, “Fungi aren’t smart enough to distinguish between people or plants…” She treated the plants like she would have “treated” a person, with probiotics, nutrition and stress reduction. No pesticides, herbicides, artificial fertilizers or fungicides. One immediate result of Dr. Rima’s treatment: the workers reported, “This is the first finca where we’ve worked where we and our families were not sick all the time during spraying seasons.”
We were told we were unlikely to receive a crop from from the finca for several years. The coffee bushes didn’t know that. Instead, 7,500 pounds in year one; 15,000, year two; 25,000, year three, and in this fourth year, about 30,000 pounds of superior green coffee beans.
There are several steps in processing coffee, each of which adds to the benefits of its nutritional values. First, the ripe coffee berries are carefully picked. Then the berries are processed to retrieve the two green beans usually found in each berry. The other ingredient in the berry is the sweet, lightly coffee flavored elixir that surrounds the beans, the Coffee Honey. This wonderful ingredient is not yet generally available outside the best coffee-growing regions.
Then the Green Beans are dehydrated in an open-air drying shed. Depending on how the beans are handled, this is the stage when they ferment and become the fabled Gold Coffee. Fermentation is practiced to enhance both the nutrient value and the storage capacity of the beans. The fermentation is usually stopped by the process of Roasting, which converts the beans to the rich chocolate brown to luscious black that is familiar to coffee bean brewing. We gently stop the fermentation without cooking the beans. We then combine the green and the gold together, for the essence of coffee.
